Born a free-spirit in a strict culture, Chef Nobuo Fukuda grew up with a desire to bridge the gap between his native Japan and the rest of the world, to become, in the words of his father, "Kakehashi." Nobuo faced incredible challenges to pursue this destiny: leaving his family in Japan and immigrating to the United States, rising from a dishwasher at Benihana to James Beard Award winning chef, innovating a cuisine that connects Japan to the rest of the world.
